How do I remove audio from a video?

Does muting a video reduce its quality?

No, not even slightly. The video stream is copied bit-for-bit into the new file; only the audio track is left out. The picture is mathematically identical to the original.

Why is it instant when other video tools take minutes?

Because this is a remux, not a re-encode: the compressed video data is moved into a new container unchanged, which is just fast file copying. Re-encoding — decompressing and recompressing every frame — is what takes minutes, and it simply isn't needed here.
